Alissa’s No Potato Potato Salad

The perfect dish for the family picnic! 

2 lbs. jicama, cubed small
1 red bell pepper, diced
2 ears corn, scraped off the cob
2 stalks celery diced
1 medium onion, diced
1 avocado, diced
½ cup raw tahini
2 cloves garlic,minced
1/3 cup lemon juice
1Tbs cilantro
1 tsp cumin
½ tsp chili powder
4 tsp fresh dill
2 tsp sea salt

  1. Mix all ingredients together.
  2. Chill for a few hours before serving
