Beet and Radish Salad

Beets and radishes are root vegetables that are excellent for maintaining a healthy digestive system, liver, and kidneys.  This salad is also a good immune system booster.

5 cups beet greens, torn
1 cup daikon radish, peeled and shredded
1cup spinach or romaine lettuce
½ cup shredded beet
½ cup raw pumpkin seeds, soaked 1 hour, then rinsed
½ cup sunflower seeds, soaked 1 hour, then rinsed
1 tsp. lime or lemon juice
2 tsp. dried basil
1 tsp. agave, coconut syrup, or honey
1 tsp dried thyme
6-8 radishes, sliced
Freshly ground black pepper
2 tsp. olive oil
¼ tsp salt

Toss all ingredients in a large bowl.
