Cream of Broccoli Soup

broccoli-almond-soup-2013-1So creamy and satisfying…one of my favorite soups! The cumin and sea salt are very important in this recipe, so make sure you have added enough of both of these to bring out the flavor of this soup. (Alissa Cohen)

3 cups water
1 cup almonds
1 teaspoon honey
2 cups broccoli
1 avocado
½ to 1 clove garlic
1 tablespoon olive oil
1 teaspoon onion
1 teaspoon sea salt
1/8 teaspoon cumin
1/8 teaspoon black pepper

  1. In a blender or Vita Mix blend water, almonds and honey until smooth.
  2. Add in the rest of the ingredients and blend until creamy.
  3. Add more sea salt if this tastes bland or delete the garlic if it tastes too zingy.
