Gorgeous Goji Pudding

This bright orange pudding is sure to give you a lift.

Goji berries are a superfood, the most nutrient dense fruit on the planet.

2 oz./60 g goji berries, soaked 2 hours
1 avocado
1 banana
1 Medjool date, pitted
1 Tbs agave nectar or coconut nectar

  1. Soak the gojis in just enough water to cover them. When they’ve plumped up, drink the soaking water – it’s delicious.

2. Slice the avocado in half, remove the pit, and using a spoon, scoop the flesh out into a blender.

3. Add the berries and the banana, peeled and broken into chunks, the date, and the nectar. Blend to a cream.

4. Add a little water if the blender is struggling. (Or do the whole thing in a food processor.)

Goji berries are fairly recent health heroes in the West.  They are very common in Chinese cuisine, where they have been eaten for thousands of years.  They are also used medicinally, and are thought to promote longevity.
