Heroic Hummus

1 cup zucchini (peeled and shredded)
1 cup cashews (soaked)
1-2 tsp garlic (minced)
¼ cup lemon juice
¼ cup olive oil
½ cup raw tahini
1 tsp Himalayan sea salt (or Celtic sea salt.  Both are better tasting and better for you than regular table salt!)
2 TBS parsley (chopped)
sun-dried tomatoes (soaked) or red peppers  (optional)

Salt zucchini lightly in a bowl. Wait 5 minutes or so, and express water. In food processor, blend cashews until smooth.  Add zucchini and blend until smooth.  Add remaining ingredients, except parsley, and blend until smooth.  Add parsley, pulse until incorporated.
