Jodi’s Kelp Noodle Salad

Soak kelp noodles overnight to remove bitterness.
Rinse and cut to desired length.
Marinate noodles in Ginger Garlic Dressing (below) in a large bowl.
Add whatever other salad ingredients you love: sliced avocado, greens, microgreens, carrots, red cabbage, cilantro, red bell pepper, green onion, and mix well

Ginger Garlic Dressing

1 cup sesame oil
2 cloves garlic, whole, peeled
1/8 cup rice wine vinegar
2 inches fresh ginger, whole, peeled
¾ tsp salt
1 Tbs honey
Juice of 1ime
¼ tsp cayenne
1 Tbs teriyaki coconut aminos
1 Tbs peanut butter

Combine all ingredients in a blender and blend. Serve over sliced veggies, as a dipping sauce, or drizzled over your favorite green salad.
