Leah’s Tabouli

tabouliI usually quadruple this recipe.  It makes a nice big bowlful that travels well and keeps well.   JWS

1 Tbs. mint, minced
1/2 – 1 cup hemp seeds or sprouted quinoa
1/4 cup red or green onion, minced
1/2 bell pepper, minced
1/4 cup carrot, minced
2 Tbs. lemon juice
1 Tbs. olive oil
1/2 tsp sea salt

Toss all ingredients and serve.
