Micro-Green Sauce or Dressing

The most common way to enjoy microgreens is raw, on top of your meal or mixed into a salad where you’ll get that texture, color, crunch, and fresh veggie goodness. There are other ways to enjoy their nourishing flavor. This recipe makes a great salad dressing as well as a sauce for entrees.

1 packed cup microgreens
1 shallot, chopped
1 garlic clove, minced
Zest and juice of 1 lemon
1 Tbs raw apple cider vinegar
¼ tsp sea salt
¼ tsp pepper
1 cup extra-virgin olive oil

Place all ingredients in a food processor and pulse until combined. With the machine running, pour in olive oil through the feed tube and blend until it’s a consistency you like – less for a marinade or sauce, more for a salad dressing.
