Nancy’s Energy Balls or Bars

A cycling friend of mine brought these gems to party that we both recently attended. I ate lots of them, then decided to share the recipe. Enjoy -JWS

These are very easy to add to or subtract from depending on what you like, have on hand, or are allergic or sensitive to. Nancy R.

Combine in a large bowl:

1/2 cup sunflower seeds
1/4 cup sesame seeds
1/2 cup chopped pecans
1/4 cup pumpkin seeds
1/4 cup ground flax seed
1/2 cup quick oats
1/2 cup raw shredded coconut
1/4 cup oat bran
1/4 cup wheat germ
1/2 cup raw cacao nibs
1/2 cup raisins or goji berries.

Warm carefully in a microwave or sink full of hot water until smooth. ( DO NOT heat too much or the chocolate will melt).


1 cup nut butter
1/2 cup honey
1 tsp almond flavor
1/2 tsp sea salt

Pour the nut butter mixture over the dry ingredients and mix well.  Roll into small balls or spread in an 11×7” pan.  Refrigerate until firm. Cut into squares.
