This dessert is so easy and so satisfyingly delicious that everyone should try it at least once. It’s a favorite in our family, often requested by grandchildren and fun to make with them. They’re nutritious enough that we have them for breakfast — they’re allowed.
2 cups dates, pitted and soaked
2 cups almond butter (raw is best)
1/2 cup carob powder (or raw cacao powder, or a combination of the two)
- In a food processor, blend the dates to a smooth paste.
- Add the remaining ingredients and process until smooth.
- Remove from processor and form into round balls.
Note: These will keep for a long time in the refrigerator.
Variation: Roll the balls in some shredded raw coconut, finely chopped almonds, or raw cacao powder (if you just can’t get enough chocolate.)
