Red Raspberry Sorbet

There’s nothing like a sweet, creamy raw ice cream recipe to please the crowds (or eat all by yourself.)

For the Sorbet

1 large avocado
1 lime, juiced (or more)
2 cups frozen raspberries
1 tsp vanilla extract
5-15 drops liquid or vanilla stevia

For Toppings (optional)

Fresh or frozen whole raspberries, sliced bananas, freeze-dried berries or other fruits, raw chocolate chopped into pieces, or raw cacao nibs

To make the sorbet: Put all the sorbet ingredients in a food processor fitted with the “s” blade or into a high-speed blender.  Add the berries into the processor straight from the freezer so they add to the icy effect.  Process until mixture is only just well combined, because you don’t want to lose the ice cream consistency and turn it into a liquid.

Serve with toppings of choice, and enjoy each and every bite, guilt-free!
