Seasonal Fruit Platter with Berry Dressing

Fruit Platter
Any gathering of people appreciate sweet, juicy, tropical fruits like pineapple, papaya, or mango, but apples, bananas, and grapes are also delicious choices.  Select the best of what’s available for your fruit platter, and place the pretty pink Berry dressing in a small, clear glass pitcher next to the fruit platter.

Berry Dressing

1 Tbs. lemon zest
4 Tbs. freshly squeezed lemon juice
16 medium-sized strawberries
40 raspberries
4 Tbs. agave nectar, coconut nectar or another sweetener of choice
4 Tbs. flaxseed oil, hempseed oil, or extra-virgin olive oil
4 fresh basil leaves, chopped
Pinch of sea salt
Pinch of freshly ground black pepper

Remove the lemon zest before juicing the lemons.  Transfer the lemon zest, lemon juice, and all of the remaining ingredients to a blender and process until smooth.  To remove any seeds from the dressing, strain it through a nut milk bag or fine-mesh strainer
