Strawberry Spinach Salad with Beet Strings

Salad:

4 cups spinach
8 strawberries
2 Tbs raw walnuts, crushed
2 Tbs raw pumpkin seeds
1 beet, peeled, then spiralized or shredded

Dressing:

6 Tbs  sherry vinegar or raw apple cider vinegar
1 cup olive oil
4 Tbs dijon mustard
2 Tbs. chopped parsley
Sea salt
Pepper

Blend ingredients in a Bullet or by hand. (This is a lot of dressing, so enjoy it on other salads as well. JWS)
