1 ½ cups pine nuts
1 ½ cups raw sunflower seeds
3/4 cup fresh lemon juice
¾ tsp. whole black peppercorns
3 cloves garlic
1 ¾ tsp. sea salt
If you soak the nuts and seeds overnight you can use the full measurements. If you forget to soak them, use scant measurements for the nuts and seeds (1 ¼ cup of each nut and seed). This keeps it from being too thick as the soaked nuts and seeds are less dense.
Blend until smooth in your blender. I use the Vita-Mix for this recipe and placing the liquids in the first and using the plunger, it blends with ease. If you are using a regular blender, you will have to use a spatula to help it move around. Be careful –and you might have to add a little water but use as little as possible You have to get a super smooth texture. It can be done – I had a regular blender for years.
I love this cheese! The possibilities to use it are endless.

This cheese is very high in protein. It not only has the protein of the nuts and seeds, but it also contains the high-quality proteins of spirulina and greens. It is full of essential fatty acids with spirulina, flax seed oil, and those found in the nuts and seeds. This is certainly a mineral-packed, vitamin-rich, antioxidant-laden, and phytonutrient dense super food. Yes, it is the super-hero cheese!
Use the same recipe as above, Best Cream Cheese Ever
Place everything but the nuts and seeds in blender.
Add 1 bunch of parsley (with stems removed) or 1-2 bunches of cilantro with stems removed
Add 1 tsp. spirulina
Add 2 TBS. flax seed oil
Blend until smooth while adding nuts and seeds slowly until entire mixture is blended smooth.
This is a great recipe for children, not only nutritionally, to make up stories and names to go along with it that will really encourage them to eat it. For little boys it could be, “Smashed Frog Spread” or “Incredible Hulk Cheese.” There are all sorts of wonderfully awful names that can entice a little ruffian to eat up! Sweet little girls can be told that it is “Princess Spread.” It makes for beautiful silky skin and hair, as it is rich in phyto-nutrients and array of essential fatty acids.
