Whipped Creme

Sweet topping for anything, or to eat alone if you are just decadent

1 cup cashews, soaked for at least an hour or two
Vanilla (optional) 1/2 a vanilla bean or 3/4 teaspoon extract
4-6 dates soaked for at least an hour, save the date soak water

Blend cashews with just enough of the date soak water so that
blender will work. When smooth add dates one at a time til sweet
enough, adding water or soak water as necessary.

Add vanilla.  This should be the consistency of whipped cream.
If you have a very powerful blender (Blend-Tec or  Vita Mix)
you can make this recipe without soaking, Jjust use water to blend
the cashews. It comes out very thick and rich and can be used as
frosting.
