Carrot Raisin Crunch Salad

(A long time favorite of mine, this salad is sweet, crunchy, and vibrant! – A.C.)


6 cups shredded carrots
1 cup raw sunflower seeds
½ cup shredded raw coconut
1 ½ cups raisins, soaked


3 oz. orange juice
2oz. lemon juice
4 tsp olive oil
1 tsp kelp
2 tsp honey
2 tsp. cinnamon

Combine salad ingredients and place in a large bowl.
Combine dressing ingredients and mix well.Pour dressing over the salad and mix well.
