This is a good alternative if you don’t want to or have the time to sprout some garbanzo beans and still have a raw dish. It has the additional benefit of being quite delicious.
1 cup cashews, soaked one or two hours
1 cup peeled (mostly), shredded zucchini
1/2 cup tahini
1/4 cup lemon juice
1/4 cup olive oil
2 Tbs. chopped parsley (optional)
1-2 tsp. minced garlic
1 tsp cumin
1 tsp+ salt
Lightly salt the zucchini in a bowl. Wait 5 or 10 minutes, then express water.
In a food processor, blend the cashews until smooth. Add all the remaining ingredients, except the parsley, and blend until smooth.
Add the parsley and pulse until it is incorporated.
